Magical Healing Chicken Soup
It’s been handed down generation to generation; special healing chicken soup that no-one but your own mum can make right for you. Usually eaten when you’re not feeling well, it is full of vitamins that will bring you back to health in no time. My boyfriend was recently ill with flu and I decided to brave the healing chicken recipes for myself. I listened to my mum’s instructions and checked out some general recipes online and voila I actually made a tasty soup that did the trick! It’s really easy to make and once all the ingredients are bubbling away in the pot, the rest does itself. I’m not one to stick rigidly to quantities, with cooking I prefer to use my eye, so I haven’t included strict measurements.
For Healing Chicken Soup you will need:
Chicken (I found thighs and legs best for meat)
Olive Oil
2 medium sized Onions, chopped or diced
3 carrots
Celery (2 or 3 stalks diced)
Garlic (2 or 3 cloves diced)
Mixed herbs
Freshly chopped parsley
Salt and Pepper to season
Turmeric to taste (just a sprinkling)
Firstly chop and dice the onions, celery, carrots and garlic. Add olive oil to a large cooking pot and gently heat up. Add the onions, celery, carrots and garlic to the pot and allow to soften for 5-8 minutes. While the vegetables are cooking, take the skin off the chicken thighs and legs. Add the chicken to the pot and fill with water until the chicken is covered. The pot should be about ¾ full, leaving a couple of inches to the top spare. Add salt, pepper, mixed herbs, parsley and turmeric to the pot and bring the water to the boil. Once the soup has begun to bubble, reduce the heat to a simmer and allow to simmer to at least 1 ½ hours. Keep an eye on the soup to make sure it’s not bubbling over and stir from time to time.
After 1 ½ hours, remove the chicken pieces from the soup and gently pull or cut the meat off the bones. By now, the meat will just fall off. Add the chicken chunks back to the soup and voila your magic healing chicken soup is done!
Don’t forget to add plenty of lemon juice, squeezed from a fresh lemon to enhance the flavour and add vitamin C to your soup.
